There should be a disclaimer with this recipe… “Please don’t think this is just another green bean recipe with bacon. It is so much more than that! If you don’t try these you will be missing out on one of life’s little culinary miracles”…

I could eat these green bean everyday! They are that good! And if truth be told, I’m not a natural born veggie lover! Most carnivores like me aren’t. Vegetables need to be spruced up a bit for me to love them… and these roasted green beans with bacon are at the top of my “food to eat” list!

There’s a little secret to making these beans fabulous… and I’m sharing it with you today…

Just looking at these makes me hungry for them!!!

These beans are insanely easy to make and are over-the-top delicious!

Don’t forget to make them with bacon!

And roast the green beans in the bacon fat. YUMMY!

And top with crumbled bacon and diced tomatoes!

ROASTED GREEN BEANS WITH BACON

Crips oven roasted green beans infused with smoky bacon flavor.

Ingredients

  • 8-10 slices of bacon I use thick cut hickory bacon
  • 1 lb fresh green beans I use haricot vert, a french green bean. I pronounce it like” harry-corvair”… close enough… I’m not french!
  • tomatoes for garnish optional

Instructions

  • Preheat oven to 425 degrees.

  • Line a rimmed baking sheet with foil. Lay bacon in a single layer. Cook until crispy done. My bacon takes about 15-20 minutes.

  • Remover the bacon to a paper towel lined dish.

  • Trim the stem end of the beans, if needed. I only do this if they beans have been sitting in the frig for a couple of days.

  • Put the green beans in the pan and roll them around to coat with bacon fat.

  • Roast for 10 minutes with the rack in the center of the oven, or until the are still very crisp but have lost that “raw green taste”. Toss once during cooking.

  • Turn on the broiler… leave the rack where it is. Watch the beans so they don’t burn, and broil for up to 4 minutes. This will give some a little char! YUMMY! *If there is too much bacon drippings you may want to spill it out before broiling so it does not catch on fire.

  • Meanwhile, chop up a few pieces of bacon and tomatoes, if desired.

  • Plate and put the bacon along the center of the green beans. Top with tomatoes in the same way.

  2. Yummy, it looks delicious. I love bacon but hubby is allergic to pork so we don’t even bring it into our home. I will l have to try it with turkey bacon and see how it is.

  4. Besides the garlic not mentioned in the recipe, it looks from your wonderful photos that you used some chopped yellow pepper which adds a terrific touch of color…and taste! Definitely going to try your recipe Yvonne. Some of the best recipes I have and use often have come from StoneGable!

  5. Embarrassed, Yvonne! You did not mention “garlic” in the header. My error in thinking ‘with bacon’ was ‘with garlic’. I sincerely apologize!! I’m going to blame it due to the fact that I haven’t had that first cup of coffee yet!

  10. I love veggies, weird, I know. So these sound DELICIOUS to me and maybe I can get my “doesn’t love veggies husband” to eat these. He WILL eat veggies but isn’t thrilled:):)

  15. Dear Stongable Lady, when I read your recipe and I am on yet another diet – I would like to do something bad;-). Seriously , I have been told than in my country in the past, if a child is fussy eater the parents invite a special person. This person is soooo good in saying how good the given food is that the child can not resist to eat his diner. You remind me of this story, not sure if it’s real;-), but I almost every time try your recopy and not been disappointed up to the moment. Thank you. Sorry for the spelling, obviously english is not my first language. Love your chicken, the other day made the eggs in a basket and next will be the green beans obviously.

  25. Do you do the beans on top of the foil with grease or do you drain the grease onto the pan with no foil? I love the idea of doing bacon on foil.
    Also, do you think doing the bacon and saving the grease would allow that step to be done hours earlier so it could be a little less of a last minute job before a dinner party? Any other suggestions to make it a somewhat do-ahead help? Thanks.

  27. This dish is very similar to one my Mom made. I saute the bacon and then saute onion in the bacon fat. The tomatoes are a nice addition and your plating is beautiful. I make these beans for all holidays. A family favorite for many many years. For Thanksgiving I will try your plating method, beautiful!
